This easy meal starts with juicy shredded salsa chicken over brown rice, black beans, avocado, red onion, and a squeeze of lime. It’s cozy, filling, and comes together fast.

Pro Tip: Double the chicken and use the leftovers in the meals that follow.

Meal 2: Chicken & Veggie Tacos

Taco night, reimagined! Fill soft tortillas with your leftover salsa chicken, sautéed bell peppers, black beans, corn, and a sprinkle of cheese. Add red onion or cilantro if you have it, and dinner’s done.

Serve With: A quick side of rice or fresh lime wedges.

Meal 3: Southwest Veggie Skillet

Star of the Show: Salsa Chicken Recipe

This salsa chicken is the real MVP — it’s used in every meal and couldn’t be easier to make!

Ingredients:

  • 1.5 lbs boneless skinless chicken breasts
  • 1 jar (16 oz) of your favorite salsa
  • 1 tsp cumin
  • ½ tsp garlic powder
  • Salt & pepper to taste
  • (Optional: juice of 1 lime)

Instructions:

Slow Cooker Method:

  1. Place chicken in the slow cooker and pour salsa over the top.
  2. Sprinkle in seasonings and cook on low for 5–6 hours or high for 3–4.
  3. Shred with forks and stir in lime juice if using.

Instant Pot Method:

  1. Add chicken, salsa, and ¼ cup water or broth to the pot.
  2. Add seasonings, cook on high pressure for 12 minutes, then quick release.
  3. Shred and stir.

Yields: 4–5 servings
