What’s on the Menu?

Meal 1: Salsa Chicken Bowls

This easy meal starts with juicy shredded salsa chicken over brown rice, black beans, avocado, red onion, and a squeeze of lime. It’s cozy, filling, and comes together fast.
Pro Tip: Double the chicken and use the leftovers in the meals that follow.
Meal 2: Chicken & Veggie Tacos

Taco night, reimagined! Fill soft tortillas with your leftover salsa chicken, sautéed bell peppers, black beans, corn, and a sprinkle of cheese. Add red onion or cilantro if you have it, and dinner’s done.
Serve With: A quick side of rice or fresh lime wedges.
Meal 3: Southwest Veggie Skillet

This one-skillet meal pulls together any remaining rice, beans, corn, salsa, and peppers into a warm and flavorful dish. Top it with shredded cheese or a few avocado slices, and you’re golden.
Leftover Tip: Use it as a burrito bowl, or enjoy it with my favorite healthy, budget-friendly tortilla chips.
Star of the Show: Salsa Chicken Recipe

This salsa chicken is the real MVP — it’s used in every meal and couldn’t be easier to make!
Ingredients:
- 1.5 lbs boneless skinless chicken breasts
- 1 jar (16 oz) of your favorite salsa
- 1 tsp cumin
- ½ tsp garlic powder
- Salt & pepper to taste
- (Optional: juice of 1 lime)
Instructions:
Slow Cooker Method:
- Place chicken in the slow cooker and pour salsa over the top.
- Sprinkle in seasonings and cook on low for 5–6 hours or high for 3–4.
- Shred with forks and stir in lime juice if using.
Instant Pot Method:
- Add chicken, salsa, and ¼ cup water or broth to the pot.
- Add seasonings, cook on high pressure for 12 minutes, then quick release.
- Shred and stir.
Yields: 4–5 servings
Tip: Make extra and freeze leftovers for future meals!
